Chef, I can’t get my chocolate to harden to the point that I can cut it. It is like a thick paste. I followed the instructions exactly. What should I do?

@eternalbliss090222 You could, but freeze it too…. Otherwise it wil be hard… And if you’re having trouble heat it a little bit (the cookie cutter) and try again…

I had to add abit more Heavy Cream than you John, 1/2 a cup didnt cut it for melting 8 ounces of chocolate…
I used Lyndt 70%
They are in the fridge at the moment, we’ll see if they turn out fine

I’ve been a fan of yours since the beginning of last year and I love your videos!
I don’t know if you’re gonna reply to this, but I really wanted to make this recipe for my boyfriend on his birthday, and I was wondering if I could use a HEART COOKIE CUTTER to shape the chocolate. Will it crumble or will it shape perfectly fine?
And instead of cocoa can I use chocolate bark for the coating? Will it melt the chocolate or not?

@MsMaceybby Since milk chocolate has alot of milk in it already, if you add the whipping cream in, it will be to, you know, milky. and for dark chocolate, when you add the whipping cream, it will sort of turn into milk chocolate. Got it?
what happens if you use milk chocolate instead of dark?
